Qianmen Market 前门

This delicacy is called youtiao 油条 (yóutiáo). It is fried bread or fried dough. It is similar to a French beignet and much lighter than a New England doughboy or a Mexican sopaipilla. When properly made, it is light, slightly crisp on the outside, and doughy but airy on the inside. When made improperly, it is a tough greasy mess. This vender had the knack.
