| These steamed dumplings are called baozi. They are larger than the usual dumpling and they are steamed. The smaller boiled dumpling is called a jiaozi. Just to make this confusing, this distinction is common in the north, but further south, steamed dumplings can also be called jiaozi and it is only size that changes the name.
Baozi and jiaozi are similar. They both have wrappings made of flour and water. The fillings are also similar - a combination of meat and vegetables. They are also dipped in the same sauces. The big difference is whether they are steamed or not, and the size. |
