Dressing in traditional costumes gives a nice flavor to the fair - and to the food. Most of the recipes have been served since ancient times.Notice the tray of ground red pepper for dipping the skewers of meat. The red peppers used are very hot, but not as bitter as the cayenne pepper we use. There is a mellow undertone to the variety used in China. |
