The yellow slabs shown above and below are Cantonese sugar 关东糖 (guāndōnɡtánɡ). It is sort of like our peanut brittle, but different. It is made with malt, rice, and starches. It is a special food for the New Year, especially in the northeast. It is crisp and sticky at the same time. It is a lighter sweet than is sugar.
Below, on the left, are blocks of brown sugar 红糖 (hóngtáng) - literally red sugar. Brown sugar is considered healthy for digestion and as having good effects on the kidneys. The brown sugar in China has a much stronger flavor than ours, halfway to molasses. |
